Hungry for the Holidays

Filipino food is more than just food; it is a way of life.  When it comes to parties, festivals, or holidays, food is very important; in some cases, it is believed that certain foods can help someone and his or her future in life.  For example, one of the prominent dishes is Pancit, or noodles.  It looks like Chinese lo mein, except the noodles are thinner and are clear.  This dish represents having a long and prosperous life and luck for the year.  Filipinos also love to party!  One of the most important holidays filipinos celebrate is Pasko, of Christmas.  They would start preparations as early as September and continue the celebration up to Three Kings Day, January 6.  There are various dishes served during Pasko.  Rice is a must for every meal.  Meat is a very important piece for a good Pasko meal; lechon (whole roasted pig) and ham are typically served.  Filipino-style spaghetti is also a favorite among filipinos.  Sotanghon soup is a soup made of thin clear noodles, chicken, celery, hard-boiled egg, and onion.  For dessert to balance out the savory meal, bibingka and puto bumbong (rice cakes) and leche flan (like caramel flan) are served.

Easter is another big holiday in the Philippines.  One famous dish is Adobo; it derives from the Spanish verb adobar, meaning "to marinade" or "to season".  This dish consists of marinated meat (chicken or pork) or seafood in a mix of vinegar, soy sauce, garlic, browned and simmered.  This dish is usually eaten with rice, but it can be eaten with pancit as well.  Lumpia, or the Filipino egg roll, is also a good dish to celebrate Easter.  The filling usually has ground beef and/or pork mixed with carrots, onion, and sometimes cabbage; all is wrapped and rolled up like a Chinese spring roll.  They are then deep fried to a golden color.  These are usually served with a sweet and sour sauce.

    I am not familiar with the Filipino culture and it was interesting to learn that food can also be thought to bring someone good luck in their future. I did not know how big of a holiday christmas was for the Filipino culture. I found it interesting that rice was such a main food for your culture. Also, the pictures you used were a great choice in showing how they are displayed.
